Recipe: Aromatic Tomato Tart

Ingredients

  • 8 sheets filo pastry
  • 2 tablespoon cooking oil
  • 1/2 teaspoon ground coriander
  • 1 teaspoon cumin seeds
  • 1/4 teaspoon chilli powder
  • 1/2 small onion, peeled and very finely chopped
  • 2 cloves garlic, peeled and finely chopped
  • 6 large ripe tomatoes, sliced

Steps

  1. Fry the onion for a couple of minutes
  2. Add garlic and continue cooking
  3. Add the spices and fry for a minute
  4. Add tomatoes and cook for 1 - 2 minutes
  5. Brush the oil on each sheet of filo pastry
  6. Fold each sheet into 1/4
  7. Put pastry on a greased backing try
  8. Spread fryed tomatoes on filo pastry
  9. Cook for 15 minutes at 220 degrees
