Recipe: Chocolate Brownies


  • 500g chocolate (mix of dark, milk and white)
  • 225g butter
  • 3 eggs beaten
  • 30ml of freshly made strong coffee
  • 225g of caster sugar
  • 75g of self-raising white flour
  • 1.25ml salt
  • 5ml of vanilla essence
  • 175g of walnut halves chopped


  1. Line a 22cm x 29cm baking tin with greasproof paper
  2. Chop half the chocolate and set aside
  3. Melt rest of chocolate and butter
  4. Mix the eggs, coffee and sugar together
  5. Gradually beat in the melted chocolate
  6. Fold in the flour, salt, vanilla essence and wall-nuts
  7. Fold in the rest of the chocolate
  8. Cook for 40 - 50 minutes at 190 degrees
  9. Leave to cool in tin
