Recipe: Millionaires Shortbread

Ingredients

Shortbread

  • 150g butter
  • 100g caster sugar
  • 275g plain flour

Filling

  • 100g butter
  • 100g caster sugar
  • 2 tablespoons golden syrup
  • 400g can of condensed milk (Fussells or Carnation – not evaporated)

Topping

  • 200g chocolate

Steps

Shortbread

  1. Cream the butter and sugar together
  2. Work in the flour with a wooden spoon
  3. Press into a 30cm X 20cm tin
  4. Bake for 15-20 mins until golden brown
  5. Allow to go cold

Filling

  1. Put all the ingredients in a saucepan
  2. Heat gently until sugar has dissolved
  3. Increase the heat and boil the mix for 5 minutes
  4. Keep stirring all the time, it will gradually turn brown
  5. Allow to cool for 5 minutes
  6. Spread onto the shortbread

Topping

  1. Melt the chocolate
  2. Pour on top
